Red & Rose Fruit Salad
Ingredients
2 cups (1 inch) cubes seedless watermelon
2 cups organic cherries, stems removed, halved and pitted
1 cup hulled and halved (quartered if large) organic strawberries
1 cup organic raspberries
4 fresh organic black figs
1 cup pomegranate seeds
5 tablespoons of coconut sugar
1/4 cup rosewater
Flaky salt
Organic mint, slivered for garnishing
Place the watermelon, cherries, strawberries, raspberries, figs and pomegranate seeds in a large bowl.
In a small bowl, whisk together the sugar and rosewater until the sugar dissolves. Pour the rosewater syrup over teh fruit and gently toss to coat. Let macerate in teh rosewater syrup for at least 10 minutes or up to 1 hour. The longer the fruit macerates, the more flavor it wil take on.
Serve the fruit in bowls or plates and garnish with flaky salt and mint. The fruit salad can be stored in a glass airtight container in the refrigerator for up to 2 days.
