Simple Egg Salad


Ingredients

  • 2 organic pasture raised eggs

  • 1 1/2 tablespoons avocado based mayo

  • 1 stalk organic celery, diced

  • 2 teaspoons fresh dill, chopped

  • Salt + fresh ground pepper to taste


Place eggs in a medium pot and cover with water by 1 inch. Bring to a boil, then cover the pot and turn off the heat. Let the eggs cook, covered 9 to 12 minutes, depending on your desired done-ness.

Transfer the eggs to a bowl of ice water and chill for 14 minutes. This makes the eggs easier to peel.

Peel and chop both eggs. Add mayo, celery, dill, salt and peper. Mix together and serve with on toast, cracker or enjoy by itself.
